Okra, butter beans, collard greens, and boiled cabbage are the veggies of choice for my southern brothers and sisters. BBQ pork is meat of choice (can't beat a steak though in my eyes) They arent keen on healthy eating here, as you can see by the obesity and rampant diabetes. But man is it gooooood all cooked in lard and fat back. Large majority of the population is obese which keeps my job safe..ha. Folks are big on oysters and fish here....especially oysters. Grilled in the shell or steamed for about 20 minutes. 52 bucks a bushel for oysters which is really a good deal. Everybody eats pork barbque. The little country restaurants are kinda nasty, but along with the specials on the wall are prayer requests, the bible belt is truly the south. Miss the pennsylvania mountains and beautiful trees, but the sun shines all the time here, and it will reach 87 here tuesday. Need to come north in August to re rent my house out as my army renter is rotating out and hoping his replacement will move right in.

It's been awhile since I have been on here and it is nice to see some chatter. Outdoor grilling huh? I will have to think up a recipe or two to share. I have been growing herbs in the house all winter, so am anxious to use some of those soon!

BBQ RIBS
2 Pounds Pork Loin Ribs Dry Spice Rub (recipe follows) 4 cups canned tomato sauce 1/2 cup diced tomato sauce 1/4 cup brown sugar 1/4 tablespoon Worcestershire sauce 2 tablespoons dried onion 1/4 cup soy sauce 1/4 cup water
Rub ribs well with some dry spice rub and refrigerate, covered, for 4 to 6 hours
In a saucepan combine tomato sauce, tomato, sugar, Worcestershire sauce, onion, soy sauce, water and 1/2 cup dry spice rub and cook over low heat for 3 hours.
Preheat a grill low heat. Add ribs and cook, covered for 3 to 5 hours. Brush with sauce during the last 15 minutes of cooking and serve with remaining sauce.
Dry Spice Rub:
1 cup chili power 1 tablespoon garlic granules 1 teaspoon onion Powder 1/2 teaspoon cumin 1 1/2 teaspoon salt 2 tablespoons seasoned salt
Combine all ingredients in a jar and cover with lid.

That sounds good and I may have to try it, after we dig out from the 16 INCHES OF SNOW WE ARE TO GET!!!!! We just got out the lawn furniture:( Unbelievable. Bad enough the Penguins lost, the Pirates lost and now 16 INCHES OF SNOW!

Just found a new recipe: Buffalo Chicken Salad
Get a rotisserie chicken from the store. Tear off about 2 cups and pour 1/2 cup wing sauce on it. Add 1/2 cup each red onion, celery and carrots diced. Cook a pound of pasta, whatever kind you like, rinse with cold water. Add to chicken mixture. Mix in 1/2 cup blue cheese or ranch dressing to the mixture. You can add blue cheese crumbles if you want too. This is so good, made it once and my husband can't get enough of it!
