If your like me I hate cooking in the house when it gets hot in the summer. This past weekend I made some Kebabs on the outdoor grill I thought I would pass on. For this you will need: 2 small zucchini's (sliced diagonally into 3/4 pieces) 2 red or green peppers (cut into wedge pieces about 1" wide) 2 small vidalia onion's ( quartered from top to bottom in wedges) Pam with olive oil or bottled olive oil garlic powder onion powder Montreal steak seasoning 1 16oz. package of smoked sausage ( cut into 1" slices) Now all you have to do is take some skewers add a slice of sausage,zucchini,pepper and a wedge of onion. repeat till skewer is full. Spray with olive oil shake on a little garlic and onion powder. and for a little spicier taste some Montreal steak seasoning or Cajun seasoning whatever your taste buds desire. The nice thing about this is you can put any vegetable you like on the skewer. Cook on grill till you get some nice browned and burnt areas rotating skewers a few times. I hope you enjoy !! Wholly crap, that sounds good! I never thought of using smoked sausage on kebabs! This is one I am going to try. Yeah, get those grillin recipes on here!

Another little trick I learned from a local watering hole if you like chicken wings, after you have cooked your wings and dipped them in whatever sauce you like drop them on your grill and crisp them up . Adds a new grilled taste to them .

Seems nobody else grills outdoors , so I will post another recipe , Take a large to medium Zucchini , Slice in half longways and scoop out the seeds. Cook up 1 box of Zatteran's jambalaya rice mix. Crumble up and Cook 1lb. of hot sausage . Mix hot sausage with rice mix and put in scooped out zucchini. Wrap good with aluminum foil . Cook on grill at med high temp or 350 degrees for 30 min. Wow !

That sounds like northern "jimbayala" to me. Well you cant take the rebel out of the yankee I guess when it comes to food. Hey Grayson, you need to come down here and go to a pig pickin' and some of the other culinary feats of magic these southern folks can come up with. I swear every little town has a festival. The mum festival, watermelon festival, whirly gig festival, peanut festival, collard green festival, etc etc etc. It is just like stepping into the twilight zone 50 yrs ago. Three piece washboard and fiddle players, jug tooters and all. Every one is sir and ma'am downhere in the Bible Belt. Gotta love it. Its a nice change.

Grady, I finally made the smoked sausage kebabs tonight and they were great! My husband thought it was a nice change and liked them alot. The new zucchini recipe you posted sounds fantastic and I plan on making that soon. I just made jambalaya last night, we like that kind of stuff. Keep those recipes coming! Sounds like you could write a cookbook!

I made the jambalaya with the zucchinni today, really good stuff! Grady may not be good at fantasy football, but he is a genius at the grill. If he says a pepper is good, you better believe him!

As for me I like it warm outside for grilling outdoors. Now we are getting close to 30 degrees. So grilling out doors will have to Wait. Been so nice out for the last couple weeks I think we have been spoiled. But if you must, check this site out, they have some really good grilled Wing recipes. and others. www.seriouseats.com PS: there is more to grilling then Zucchini!

For all you steak lovers try this: Mix together:
1 envelope Taco Seasoning Mix 1 envelope Good Seasoning Italian Dressing Mix
Pierce steaks with fork. Rub in oil and dust in seasoning mixture. Then pour Coca Cola around steaks in a deep dish, seal container. Refrigerate for 24 hours. Drain steaks, and grill as you wish. Mighty tasting steaks you will have.
Now a really good blooming onion, with a good horseradish sauce, would go good with this. So if any buddy has these recipes please post.

Southern style:
1 bushel Oysters, 1 peck of littleneck clams, 1/2 bushel blue crabs, dozen potatoes, ears of corn, and vandalia onions. Put them in a 55 gallon drum of charocoal grill with some pork chops...old bay seasoning. Side of okra, and look out now.....
