Are there anywhere in the FC/Dubois area that has good chili dogs? I am coming to visit the administrator this friday, and I would certainly like a good chili dog. I could bring some coney island ones from Sharon or New Castle but they may be a little soggy before I get there.

I always cringe a little when a joint calls them "Chili Dogs". Some are okay, making true "Hot Dog Sauce", but some places wouldn't know proper sauce if a pot was simmerin' under their nose. I swear some places put Hormel Chili on their dogs.
A good hot dog sauce has to have enough ground cloves and cinnamon in it to taste both. No veggies big enough to identify, never any cumin, and beans, I've seen them, are just plain wrong. I guess it is a DuBois thing, living your life in area where Nick's Sauce was invented, way back in 1918. It was the original, and was a "Greek" sauce, not Mexican or Italian. A lot of places have copied it, and some have done it rather well, but when you get out of this area it seems that some people have gotten a strange idea that Hot Dog sauce should taste like Chili.
I guess that why I prefer the term, "Dogs with sauce" to "Chili Dogs".

Don't forget, Frank Boyer always asked...."Do you want my "thauce" on it Brucie?".....not...."Do you want my chili on it Brucie?"... ;D I'm quite sure that on Coney Island they call it Hot Dog Sauce too. They even had a Nick too, also a Greek immigrant, who started the "dog with sauce" thing in that area. These places like "Pink Hot Dogs" and Tony Packo's weren't even a dream yet when the DuBois Nick, and the Coney Island Nick, started peddling their sauce.

I have a couple recipes that are very similar, but neither uses yellow mustard. They call for dry mustard instead. I dislike Yellow Mustard so much that there is none in my house, so I've always stuck with the dry. But, if you like your dogs with sauce and yellow mustard, quite popular some places, you might prefer the yellow mustard in the sauce also.
For my tastes, in about any recipe, I increase the chili powder, cloves and cinnamon. Chili powder and cinnamon can go up by 25-50% without a big change in flavor, but a little cloves go a long way. So if you like a little more clove flavor, a shake or two and taste would be my recommendation.

JERRYS HOT DOG SAUCE
1 Small Onion Diced Real Fine 1 Garlic Bud Diced 1 1/2 Pound Gound Beef 2 Cups of Water 2 cups of Ketchups 1 tsp Cloves 1 tsp Tumeric 1 tsp Dry Mustard 1 tsp Cinnamon 1 tsp Paprika 1 tsp Chili Power 1 tsp Pepper 2 tsp Salt Cook ground beef and drain grease Grind ground beef FINE, put in food processor for a couple of seconds Add all ingredients to a Crock pot Cook on high for Three to Four hours. Stir often. TO long of cooking time makes sauce dry. Good for 25 dogs. Depending on serving. You can make two batches at once, but you will need a big crock-pot and longer cooking time. Can be frozen, just as good out of the freezer, then out of the crock pot.
CLOVES or no CLOVES admin, you make this dog sauce, and make it right, there will be no need for you to go out for dogs.

Sounds like a good one wildcat2. I know I would like it as it is just about identical to the recipe I use, just no paprika in mine. Love them cloves.
Sometimes I use celery salt in place of the regular salt.
I prefer not to make the meat so fine though. chopped with a spatula while browning is plenty fine for my tastes.

By the way, I did find some good DOGS WITH SAUCE over the weekend. Five star potato salad as well. Had a nice visit to the crystal city of the shortway. (can I say that?) Park looks very nice and clean, turned from main street to 3rd street heading toward R-ville and people were out and about mulching etc. All what was missing was Billy hauling his wagon and a neighborhood group of kids selling kool-aid!!!
